Who loves crisps? Who loves zucchini? Put the two together and you have some yummy snacks when your looking for something to satisfy! These Baked Zucchini Crisps are super easy and can be served alone or as part of your main meals.
Ingredients: Makes 12
- 1 x Large Zucchini
- 2 x Slices Of Ham
- Shredded Parmesan Cheese
- 1 x Tablespoon Of Vegetable
- Salt & Pepper
1. Preheat your oven 220c.
2.Slice your Zucchini into slices, approx 2mm is good. Place on a bowl and add vegetable oil. Stir gently to ensure zucchini is coated on both sides.
3. Prepare a oven tray with baking paper. Lay each zucchini circle out on tray at least 1cm apart. Drain off any excess oil if any before laying out. Season with salt & pepper.
4. Finely dice ham and top each zucchini circle with this and some shredded parmesan cheese.
5. Place in the oven and bake until tops are crispy. Serve by themselves or add to any main meal.
Tip: If you prefer you can use bacon instead of ham on top. Just makes sure bacon is diced finely.
